Here are some recipes, tips, and hints for making some yummy food with your organic veggies and herbs.
Collard Greens and Kale
Pull leaf from stem, swirl greens in salad spinner or wash in sink and shake off excess water. You can boil greens (kale) in salt water for 6 minutes to blanch the greens, this can help cut the natural bitterness of certain greens. You can also add a bit of sugar while cooking or bacon grease to help cut some bitterness.
Onion (thinly sliced)
3 tbsp olive oil
Garlic cloves to taste (diced/pressed)
3 slices of bacon fried (optional)
Salt and pepper to taste
4 tsp of lemon juice
Hot sauce (optional)
Once greens are cleaned and possibly blanched, set aside. In cast iron skillet or pan saute’ onion and garlic in olive oil. add bacon crumbled and bacon grease (optional). Add in greens, salt and pepper, and lemon juice. Saute’ on medium heat for up to 10 minutes/until tender. Serve with hot sauce (optional) and seasonings to taste.
Lettuce and Radish Salad with Buttermilk Dressing
1 tbsp olive oil
kosher salt and black pepper
1/2 cup buttermilk
3 tbsp mayo
2 tbsp chopped parsley
1 clove garlic (Finely chopped)
4 radishes, thinly sliced
1 shallot or onion of your choice thinly sliced
In a large bowl whisk together buttermilk, mayo, parsley, garlic, salt, and pepper. Add the lettuce, radishes, shallot/onion, and croutons, toss and serve.
Pesto, Radish, Sea Salt Crustini
24 thin sliced baguette (from one loaf)
2 tsp olive oil
1/2 cup pesto
Radishes thinly sliced
Heat oven to 400 degrees. Place baguette slices on baking sheet, brush both sides of bread with olive oil. Bake until brown (4 to 5 minutes). Dividing evenly, spread the pesto on the slices, top with the radishes, sprinkle with sea salt and enjoy!
Radish, Snow pea, and Avocado Sandwich
2 slices multigrain bread
goat cheese (or cheese of your choice)
radishes thinly sliced
sliced red onion
Toast bread and combine ingredients into a sandwich, enjoy.
